During harvest season, nothing beats the taste of a freshly picked tomato. Last week, I purchased 10 kilos of Roma tomatoes and processed them to lock in the flavour.

In this recipe, I show you how to make fresh salsa. It's so simple!


  • 4 tomatoes

  • 1 lime

  • 2 tbsp coriander (cilantro)

  • 1/4 chopped onion

  • pinch of salt

  • 6 spins of freshly-ground black pepper

  • 1 pickled jalapeno - more if you like it spicier


  • Chop tomatoes, onion, and jalapeno into quarters and toss into the food processor.

  • Squeeze lime into the food processor

  • Grab one pinch of salt and 6 spins of black pepper and toss it into the food processor.

  • Close and set processor to pulse. Then, tap the food processor setting until the consistency is the way you like it. Sometimes bits and pieces stay on the top of the container, so open it when you think it is ready and then push any large bits to the bottom for a final spin.

This dish is delicious with tortilla chips, inside tacos, and on top of cooked fish.
